Mimic Mutts

Well, today I got another step closer in my quest for a good meatless hot dog. These came out looking more like sausages than hot dogs, but at least they didn’t pop out of the tin foil in the oven like the ones I attempted yesterday. I can definitely tweak the size a little more. Here is my issue. I love the texture of seitan for my new “mimic mutts” but am working on getting a better flavor. I’ve read posts from lots of people saying how much they love the taste of seitan but after trying several recipes I have to admit that to me it still tastes kind of bland, both the simmered in broth and the baked. My mimic mutts don’t have to have a strong flavor because I’ll be loading them up with mustard and onions like I would for the real thing, but it would be nice for them to have some underlying taste of their own. Is it just the long-term vegetarians who think wheat gluten tastes great or am I doing something wrong? It just seems to me that the strength of the broth I’ve simmered it in or the amounts of spices I’ve mixed with it should have given it a stronger flavor.

Hi! I’m so glad I found another veggie blog on wordpress! YAY! You have a neat place here! I’m not all about wheat gluten but I will try just about anything as long as it’s vegetarian!
Yay - I’m glad people seem to like the name of my new food creation even if the creation itself isn’t quite perfected yet. As soon as I food shop again later in the week I’ll pick up some more wheat gluten and try it again. I don’t give up easily! Check back! Hugs to you!
