Cheat Loaf

Last night we went to a friend’s house and played board games. It was fun. Hubby and I won two games. What a great partnership! Plus, I made a meatless meatloaf for dinner last night, which turned out really well, although a bit on the moist side. I used Jennifer McCann’s Magical Loaf Studio, click here for it, to make the “cheat loaf,” which is what I like to call it. Next time I’ll take her suggestion and cook it in an 8″ x 8″ pan so it will be a little crispier. I used garbanzo beans and pine nuts which made a nice and colorful combination with the red onions and parsley. I have to say that the vegetarian food I’ve been making lately is also some of the prettiest food!

This is wonderful. I will have to check out some of these recipes. The salad looks really good. Oh, when Ernie and I make bread we use the Vital Wheat Gluten and we have found a way to cut down how much we use because it does give the bread a funny taste. Good luck with your quest for Hot dogs. Any vegen ones I’ve tried have been way to salty. So I’ve gone back to eating Healthy Choice.
I thought you two would get a kick out of this. I am still learning so many things…it’s interesting to know the different ways other people are using wheat gluten. Well, I will continue to perfect my mimic mutts once I get some more wheat gluten in the house. Check back…Hugs to you!
