Fiddlesticks!

I finally got some wheat gluten at the grocery store so now I just have to find time to try my mimic mutts again. I have some new ideas in mind for them and I’ll post about them as soon as I get a chance to try them out.
For dinner last night I wanted to use some collard greens I had bought to try and increase my calcium without the use of animal milk. I ended up with this interesting dinner. It is forbidden rice, quinoa, scallions, black-eyed peas and zucchini stuffed into the collard greens and steamed, served with a garlic/lemon/tomato sauce and fiddleheads on the side (which I was fortunate enough to fit into the same steamer and cook at the same time as the collard greens - easy prep). I really like fiddleheads - they are so interesting looking and they don’t leave a bad aftertaste like some green vegetables do. 
Well, techno-geek hubby wasn’t thrilled with the dinner but he did have fun later in the evening finding ways to say the word “fiddlesticks” whenever he could. I admit the combination probably wasn’t the best but I did like the garlic/lemon/tomato sauce and will find another use for it in the future. I ended up with lots of left over filling from the collard greens so today I threw them into some creamy tomato soup and they were yummy.
I’d like to post a question regarding staples in the kitchen. I’m sure every cook out there has ideas about things they always like to keep on hand in their kitchen and what to do with them in a pinch. My favorite is a can of diced tomatoes. In a pinch they can make a quick sauce. I have used the diced tomatoes as a base for soup which I added leftover grains and veggies to and it was some of the best soup I’ve had, better than any store-bought or mix, anyway.
