Vegan Chicken Salad

Got this recipe from Ariell’s Vegetarian Belly and decided to try it the other night because it was too hot to cook. This was wonderful. I used her recipe but added a tiny bit of dijon mustard which made it taste a little more like egg salad or devilled eggs but I love those so it was yum! Served in some small pitas with lettuce and tomato alongside some heated-up Amy’s Organic Vegetable Soup and it was the perfect meal. I will have this again. So easy, simple, and good. The kind of food I like! If you haven’t tried it yet, you really should. ![]()

It really is a great and simple recipe. Yes, Amy’s soups are great. Whenever it’s inconvenient or too hot to make my own, I can always feel good about Amy’s. - I think I have two cans of your favorite in my cupboard right now!

I like the Amy’s No Chicken Noodle Soup. It’s great if you are not feeling well.
I haven’t tried the No Chicken Noodle yet. Sounds good though. I’ll have to start stocking up on some soon to prepare for Fall and Winter. Yikes.
