After the Fest

What do you do after attending an apple festival? Why you go home and make apple pie! I actually made this apple pie before going to the festival, when I was staying at Niece #1’s house. But I had a lot of posts I wanted to put up first so posting this after the Apple Fest post kinda makes sense.

This is actually what my family calls Swiss Apple Pie, where the crust makes itself as it bakes. My MIL makes a similar version, without nuts, and calls it Swedish Apple Pie. I’m sure there are many variations out there. Like many mis-nomed foods, this pie probably didn’t originate anywhere near Switzerland, but to distinguish it from the typical regular-crusted American Apple Pie, I suppose it is as good a name as any.

The ingredients are simple. If any of my veggie friends decide to veganize it, I’d love to know. As it stands on my blog at the moment, it is a lacto-ovo-vegetarian pie.

Stir apple slices up in a large bowl with the sugar and cinnamon mixture (or you can shake them all up together in a big zip lock bag - this is fun to do with a little one).

Arrange apple slices in pie pan. Mix all other ingredients together in a separate bowl until well blended. Pour mixture over the arranged apple slices (it may not be very fluid depending on the size of your eggs - if that is the case, just plop it over the apples and press it around with a spatula to spread it evenly - it will melt and fill cracks a little on it’s own as it bakes). Bake at 350 degrees F for 45 minutes.

Note: I arranged my apples in the photo above so that all around the edges of the pan, the slices were sticking out slightly. I thought I was being a fancy-pants. It ended up looking like I had french fries poking out of my pie at the edges. LOL. It still was kinda neat looking though. The pie tastes great whether you arrange your slices nicely or dump them in the pan so don’t worry too much about it if you are not creative. ;)

Note 2: Please see the comments section where my friend, Ariell, gives me some pointers on veganizing this recipe! Thanks again, Ariell - now we can ALL enjoy this yummy pie! :)

Enjoy!

It looks lovely. I have not made an apple pie in about a year but yep it was Vegan. I think I posted it on Vegan Momma.

Oooh - I will have to go check it out and see how you made yours! Hope you are well and I hope to catch up to you soon! Working on an email to you! ;)

OOooooooh, I need to go get the ingredients so I can make that bad boy. I love apple pie.

LOL. I think you’d like it AntiBarbie. I can’t imagine anyone NOT liking it! LOL. But do let me know if you try it and how yours comes out!

i love apple pie. it is so easy to veganize.

for the eggs, you can use ener-g egg replacer, apple sauce (give it some extra appleness, like it needs it), or a mashed banana. since it is fall, you can also substitute with pumpkin.

for the butter, you can easily find a vegan “butter” (like earth balance). some brands also come in sticks for baking.

Thanks, Ariell! I’ve been afraid to use egg replacers but I’m liking the idea of using apple sauce, banana or pumpkin. Heck, I’d eat those anyway! LOL. But thanks for the info - I’m going to post it on the post page so everyone can refer to your comment.

Will have to try this version of a apple pie - BUT can you tell us this side of the water what a ’stick’ of butter is - in ounces if possible or grams please. I assume the other measures mentioned are c = cup.

    thanks :-) X

Yes, I will. So sorry about that Penny! Keep reminding me about these lapses I have - they are not meant to slight my international friends, I’m just a slow learner! I love you guys! Updating my post for you. And yes, you are right - “c” = cup!

looks delicious…might have to try it out - it almost looks fool proof so i might do okay. :D
If it’s Teeni proof that automatically translates to fool proof, my dear! LOL. I do hope you make and love it. It’s a nice change from the standard apple pie.

personally, i have never used Ener-g egg replacer, but I know a lot of people who have. it is good for people will allergies. according to their website it does NOT include the following:

gluten, wheat, casein, dairy, egg, yeast, soy, nut, low protein, rice

    http://www.ener-g.com/store/detail.aspx?section=8&cat=8&id=97

i usually use pumpkin as a substitute which is great in cookies and I am sure would work well with this pie.

Wow - gluten, casein, egg, soy AND nut free? This is a great allergen free product! Thanks Ariell!

Apple pies are one of my favorite desserts. I love apples and cinnamon. I have never seen one like this before. It looks good. I would be open to try vegan but don’t mind a few eggs now and then. ;)
Hey Beth Ellen - maybe you are a vaguetarian like me! :)

It looks delicious and now I want some! I’m so bad that way, I see a commerical on tv for pizza, I want pizza. The Food Network is my favourite! Saw Chef at Home or something the other day and he made an apple pie, I could almost taste it! I think I was just about to lick the screen! Then that’s what I had to have, so I made baked apples that day instead… Perfect season for apples though!

LOL. Paige that sounds like a dangerous condition. Whatever you do, do NOT turn on the home shopping channel! You might buy everything!!! heehee. You are right - it is the perfect season for apples! I love my MacIntosh’s!!! Perfectly sweet and tart - yum!

looks good too bad i am allergic to eggs!

  10. kaylee2 (133 comments.) on October 23rd, 2007 5:33 pm

Okay I am a idiot! I didnt read ariell’s comment duh! I can be slow sometimes ;)
Yup, Kaylee even you can have this if you use one of those substitutes that Ariell mentioned. No reason why we all can’t have some pie. :)

  11. BitterSweet (9 comments.) on October 23rd, 2007 6:04 pm

Mmm, you just can’t beat good old apple pie… Sounds wonderful! (And soy yogurt [maybe 2 Tablespoons per egg] also works as a good egg replacer in applications such as this, if you happened to have some on hand)

I can’t have the soy, but that doesn’t mean my readers can’t use it! Thanks for another great substitute idea, Hannah! I never realized there were so many ways around eggs. Makes you wonder how we ever got so reliant on them for baking in the first place.

  12. Hannah (382 comments.) on October 23rd, 2007 8:43 pm

Yum, this looks amazing! Thanks for posting the recipe, and converting the “stick of butter” … I will have to note that down somewhere as I have other US recipes that talk about sticks and I usually have to guess!! Now I know it’s 1/2 cup, sweet!!

It really is yummy, Hannah. And if you ever need help with any of those types of things from the US, just ask. I don’t ever mean to slight my international friends, I just take some things for granted sometimes so don’t ever feel bad to remind me to translate! With my memory, I need all the help I can get. ;)

OOH, i think pumpkin added would be yummy, referring to Ariell’s suggestions. Although looking at the way you made it and how golden and yummy it is, I see no reason to mess with the recipe! wink wink…

Thanks, Heather. I think the pumpkin sounds good too. I can picture you and your mom having a slice of this together. :)

  14. merrimerri on October 24th, 2007 12:28 am

EEk looks SO good, and SO easy!
I love that it is made with whole wheat flour..

Thanks, Merri! The original way my family has made it was with regular all purpose flour but I didn’t see why it couldn’t be a little healthier so I tried it and it tastes just great. It is a good way to help begin a transition to whole wheat flour as well, because the sweet and tart of the apple pie ingredients go well with the whole wheat flour taste.

okay why didnt i meet your readers about 5 years ago? They are soo good with these baking tips :)

  16. Kami (321 comments.) on October 24th, 2007 1:07 pm

YUM! I am so going to make that. I love apple pie but I don’t enjoy making pastry although I do have a fool proof recipe.

Thanks Teeni, I am making this for this weekend’s belated family Thanksgiving celebration!
    :-)
Kami - I hope you all love it as much as I do. Let me know, okay?

  17. Kami (321 comments.) on October 24th, 2007 1:24 pm

My comment is lost again :-) I must be spammy looking - LOL.

What about the walnuts? Jay is allergic to nuts, if I leave them out should I add more flour?

    Thanks!

Sorry - It is so weird that this comment showed up but the other one got caught by spam. Well, no worries. I found it and it’s here now! Ooops - almost forgot - Kami you can make it without the nuts, you don’t have to add more flour. It should be fine.

might have to trey this one. Hubby loves apple pie!

I feel bad now. That pie I made in the picture got eaten by my niece, myself, my mom, my great niece and my niece’s husband. TGH didn’t get ANY!! I guess I should make him one now or you are going to make me look bad, Calamity! ;)

  19. Calamity (54 comments.) on October 24th, 2007 5:14 pm

ROFL! I’m sorry! I had no idea you all were being pie hogs! ;)
LOL - it just kinda happened while nobody was looking. So really, it’s nobody’s fault. Yeah, that’s it…it was an accident! :)

  20. Red (143 comments.) on October 24th, 2007 5:19 pm

I know, I know, Im late .. is there any pie left? I dont normally like fruit pies, but that one looks just so incredibly yummmmy! I wish I had smell-a-vision!

Um, well….the good news is I’ll be making another of these pies since TGH didn’t get any the first time around either so don’t feel bad, Ms. Red. But if you can’t wait please feel free to follow the recipe and make one of your own. :)

  22. Kami (321 comments.) on October 24th, 2007 10:59 pm

I will let you know, don’t worry!

I do have a kind of spammy personality sometimes so I guess it’s picking that up ;-)
    Hee hee.

Nuh-Uh! I love your personality!! It is wonderful. I think the spam catcher just suspects you because of all those long lists you send in for the games I get going on here. LOL.

Mmmmmm… I have yet to make a raw apple pie, one that you could eat for breakfast, lunch, or dinner! I have to say that I’d have a difficult time resisting a big slice of yours. It looks and the recipe sounds soo yummy-yummy! I can almost smell it, lol.

Nice to read your always fun posts, great to come by and see what you’ve been up to :)
    Good Energy, my friend!
    -BB

If you ever do a raw apple pie, I will volunteer to taste test it for you! ;) Good to see you, my friend!

  24. kilax (40 comments.) on October 5th, 2008 8:47 am

I can’t wait to try this! Do you still cut it like a pie? Do you think this is something you could make it a rectangular pan and serve in squares? Hmm… or is it more liquidy than solid, like some pies?

I still cut mine the same as I would any other pie. Sure you could put it in a rectangular pan but you may need to increase the ingredients to fill it up. I think the texture is more solid than some apple pies and similar to a fruity brownie. That’s a weird description but it’s all I can think of.
