Chicanery Nuggets

Lots of kids love fast food chicken nuggets. But if you are a vegetarian kid there’s no chance of that happening any time soon. And you don’t have to be a kid to like those fun finger foods. So how about a version that is just as fun but without the chicken? How about chicanery nuggets made with seitan instead of chicken? These are the general idea directions and not specific as to ingredients or times. Working with wheat gluten can be time intensive because of cooking/roasting/simmering times. When I have time, I usually try to make up a big batch when working with it to make quicker dinners in the future.
I make these using the traditional method of simmering the seitan but I don’t use soy sauce, I use a vegetable broth and add some mock chicken seasonings. Simply mix up the vital wheat gluten and then tear off generous 1″ round portions, flattening them with your thumbs and stretching them to shape a little. They do swell to a larger size when simmering so remember to start off with small pieces.

When the simmering is over with you can freeze the little nuggets right in the broth that they simmered in or store them in the fridge that way for up to five days so you can stop here or continue to the next step. I store a lot of mine frozen in their broth and then pull them out and continue with the next process as I want them for meals.
Arrange three dishes - one with crushed corn flake cereal, one with egg whites or egg substitute, the third with all purpose flour. Take each nugget and dip it first into the flour, then the egg substitute, then the corn flakes. Place them on a cookie sheet covered with parchment paper.

Then bake them 10 mins each side. Serve with a couple of different sauces to dip them in, like ketchup, barbecue, or honey mustard, vand some salad and fresh veggies or maybe even sweet potato oven fries! Yum.

Thats a great idea.That is one thing that I never thought of doing before.Though,there are alot of meat dishes that i eat vegetarian style.I am one that likes to think there is a way to make every dish that way.LOL! I know that may not be possible but, I will not give up til I have experimented.Anyways those look so yummy.

Yeah, now that I eat healthier he probably can eat most anything I make. There are also a lot more allergen free foods on the market to make it a little easier.
Those almost look unhealthy enough to eat!
It’s the same with french fries. I love me some ketchup and that is the whole reason for french fries.

Mmm…BBQ sauce… Well, they do look. You know I am just having fun here. I am gradually making changes and I would definitely considering trying something like this.

I’ll have to make something similar. When I prepare meals for my daughters nonveggie playmates I make sure I include similar foods along with whole foods. I imagine they would love these. Thanks for sharing.

I think veggie pulp would be a great addition - maybe some wheat gluten and spices in addition just to help hold them together in a good shape. I would think broccoli and spinach or other greens would be great with it. Let me know if your experiments are successful!

Thanks, Kami! I just want to show that even a normal person (we can call me normal in this case) who is not a strict vegetarian or vegan can eat healthier and have more vegetarian/vegan meals incorporated into their lives. If I can do it anyone can.
It can be made without the gluten. I use ground flax seeds that holds it together. I have made something similar but it was raw burgers and I use veggie pulp. I will just make them smaller. I believe I posted the raw burgers on one of my website.
Oh, I do think I remember seeing your burgers. They looked yummy!

Before I was a vegetarian chicken nuggets & a basket of fries were one of my all time favorites! You are so brave and adventurous with your cooking and recipes Teeni, I admire that in you. I feel bogged down so often that I don’t want to take the time. This I may need to try!

Thank you so much for the warm hugs, Heather. It is cold here tonight. I always worry about my friends in the north and hope they are keeping warm too. Oooh - fries are still one of my favorite foods - but now I just bake oven fries at home. Baked ones aren’t too terrible I hope, because I need them to eat my ketchup with!

Heh. Sorry about the fireplace, Heather. If it makes you feel any better - we just have an electric one but it is also a space heater so it gives off the heat and the ambiance of a fireplace without actually getting messy. I also light some candles to scent the air. It’s still very cozy and that is what matters!
