EZ Vegetable Chowdah

Is my Boston accent showing? LOL. Here is some yummy vegetable chowdah that I made and I’d like to share it with you! It was inspired by some chicken vegetable chowder at a restaurant that I had some time ago and loved. So I figured something similar could be made at home without the chicken. My version uses rice milk and mostly organic frozen vegetables to make it easy. This can be made vegan or vegetarian or lacto-vegetarian. Prepared any of these ways, it should taste good and drive away those nasty winter chills.
- 1 generous cup of celery, chopped
- 1 generous cup of onions, chopped
- 3 tablespoons of butter or butter substitute (my vegan friends seem to tend to like Earth Balance)
- 2 potatoes, cleaned, peeled, and diced into small cubes
- 1 sweet potato or yam, cleaned, peeled, and diced into small cubes
- 1 bag (16 oz) organic frozen vegetables - I used a carrot/pea/corn mix from Cascadian Farms
- 1 pkg (2 pints or about 4 cups) of No Chicken broth or veggie broth - I use Imagine’s Organic No Chicken Broth
- 1/2 tsp ground thyme
- 1/2 tsp ground sage
- 1/2 tsp dulse flakes (sorry, forgot to add this, and it’s optional)
- 2 cups rice milk (you can use soymilk, or you can use cow milk if you do dairy)
- 1/4 cup (4 tablespoons) cooking sherry or wine (optional, but tasty)
- 3 tablespoons of arrowroot powder or cornstarch
- Salt and pepper, to taste
- Chives for garnish
Saute celery and onions in the butter or butter substitute at bottom of large stock pot. Cook until onions are translucent, about ten minutes.
Add the broth and spices, bring to a boil.
Add the potatoes and sweet potato (if you have any other veggies hanging around the kitchen you don’t know what to do with, they can probably get thrown in here as well with good results). Empty package of frozen veggies into the pot. Let simmer for 20 minutes or until potatoes are tender.
While chowder is simmering, mix the arrowroot powder or cornstarch with the sherry (or equal amount of cool water if not using sherry). Add it to the pot when the potatoes are tender and allow to simmer five minutes more, stirring to mix thoroughly. Remove from heat.
Garnish with chives when serving.
Like most soups, this actually tastes even better the next day. I have made it with both cow milk and rice milk and both versions are delicious. I was afraid after having had cow milk chowder for so many years that I wouldn’t like the rice milk version but I was pleasantly surprised and am very satisfied with the outcome. Yum!
For a corn chowder variation - uses two bags of frozen corn kernels in place of the bag of mixed vegetables and add a 1/2 teaspoon of liquid smoke (optional).

Ooooh. Hay, your friend’s chowder looks yummy too. Corn chowder is my favorite!! But I’m trying to lay off the bacon and cheese so stop torturing me and tempting me!!

I really liked how this came out. And again, it’s another flexible dish that you could do so many ways, or use different spices. You could add meat if you like, or seafood. My absolute favorite is corn chowder but I went with vegetable chowder to get more veggies in there and make it healthier.
OooOOoh! That looks and sounds quite good. I’ll have to steal that recipe! I’d add some croutons to it while serving and call it done.
I think you’d like it Ms. Red. And it really is so easy. Plus you could spice it up any way you like. Croutons is a good add! I love oyster crackers, myself. Yummy little buggers.
