Rice and Beans and Collard Greens

I was inspired to make this recipe by my friend Beth Ellen. She makes a similar rice and bean dish using the spice called Spike. I didn’t have any Spike on hand, but I added carrot matchsticks, collard greens, green onion, and orange bell pepper to brown rice and red kidney beans. To top it all off, I added some of Frank’s Red Hot Sauce. Yum. This is a nice and easy dish that TGH and I will have again and again. We both like the hot sauce! :D

    Dang, Teeni, it looks good enough to eat!

    It’s very yummy and very satisfying. I was surprised when I first had it. I think it’s a great meal that is completely vegetarian and vegan. It’s good to switch things up once in a while. :)

    I make a dish very much like that. I vary the beans, and sometimes I dont put in the rice. Just beans and veggies. I usually have some form of it for lunch ;)
    Oh, yeah - there are so many different types of beans in this world. And most of them would work just fine in this dish. I never thought to skip the rice - but hey, why not? You could also probably use quinoa or some orzo macaroni to change it up. :)

    I am curious about the collard greens..
    (I will look it up but wonder what it tastes like?
    We don’t have that kind of vegetable here…
    The recipe looks yummy, I adore rice and beans..

    I used frozen collard greens because I can get those year round. They are a lot like spinach or kale. In this dish you really don’t taste them because there are so many other tastes (like Frank’s Red Hot Sauce, LOL) but if you could, I would describe the taste and texture as being a lot like spinach. Also very healthy for you.

    That looks great rice and beans are good. I’ve made them in a variety of ways, and they are always a winner. Of course, Aiyana always demands more. Sheesh, where does she think she’s at, a restaurant? ;-)
    Aiyana is a cutie! I’m so glad she has such a healthy “restaurant” in your kitchen! LOL. I’m sure you’ll have her cooking things like this on her own soon enough. Hmmm - maybe you will end up getting waited on once in a while? ;)

    You don’t like beans? Hmmm. I guess you could just do it without the beans and add more veggies and other good stuff - that’s the beauty of this type of dish - versatility! :)

    Yum! I would love to make this tonight… Just need a stove :-(
    Awww. I really am sorry about that Talina! I actually made mine in an electric pot that is pictured here. The rice was really the only thing that needed cooking in there. Then I used canned kidney beans so added those at the end just to warm them up and the rest of the stuff was raw.

    Beans? NOOooooo!!! Kidney, brown, white, navy, pinto, mashed, dried, refried, any sort of bean!!! Nooo, I no like them. YUCK!

    Well, okie dokie, Sam I Am, we will not make you eat them in a house or with a mouse! LOL. ;)

    I am DEFINITELY am going to see if they are available frozen here; I ADORE spinach and dark green vegetables.
    I eat a lot of chinese vegetables most of which are of that family.

    I hope you find them, Merri - but if not, just go ahead and substitute your spinach or chinese vegetables. Any of them should work fine and be just as delicious!

    Hi Romi! Funny - that is one of the things I noticed when I started eating more vegetarian dishes - the food is much more colorful and pretty! LOL.

    Looks good. There are so many things you can do with rice and beans…but Frank’s Red Hot Sauce?? ;) You’re suppose to put that on wings….

    And we used to looooooove us some Red Hot. Gawds. I used to put it on just about everything. Seriously! luv hot peppers…

    You don’t eat them anymore, huh? I would think they actually might be good in one of your smoothies. Kinda like a virgin bloody mary or something.
