I Scream, You Scream, We All Scream For Ice Creme

Okay, well, maybe YOU scream for ice cream, but I am screaming for MimicCreme! This product is a non-dairy liquid that can be used as a replacement for heavy cream in recipes such as soups and sauces (think Alfredo) and also as a base for ice cream! It is dairy-free, gluten-free, and soy-free. It’s also vegetarian and kosher. The unsweetened and sugar free versions are vegan (the sweetened version has sugar). Get this - it is made mostly of cashews and almonds (sorry my nut-allergic friends). Check out the ingredients in the sweetened version which is what I tested: Purified Water, Sugar, Almonds, Cashews, Maltodextrin, Tapioca Starch, Guar Gum, Salt, Bicarbonate Soda.
I try to buy a “new” item each time I go food shopping in order to expand my taste horizons. For my latest shopping trip - my test item was MimicCreme. My regular readers know that I’ve been trying to limit my animal consumption, so anything that helps and has such innocent ingredients as this product, simply must be tried. Fortunately, my closest regular grocery store has an expanded health food and organic section and I was able to find the MimicCreme right near the rice/soy/almond milks in similar aseptic packaging. But, I admit that I was skeptical. I mean, really, how good can this taste? How creamy can it really be? It’s made of nuts and water for crying out loud.
I knew I had the perfect test for this item. I was really excited. I truly do enjoy ice cream and it is hard to watch TGH eat it sometimes without wanting some myself. Fortunately I don’t crave it too often so if this “cream” was all it was cracked up to be then I could afford to switch out even more dairy from my diet.
Although my favorite ice cream is Maple Walnut, I wanted to make an extremely simple ice cream recipe as a first test. Also, I wanted it to be a flavor that TGH would taste test as well. For some crazy reason, he does not like Maple Walnut. I am pretty sure he is not from the same planet as me. So, the perfect choice that we both could always agree on was chocolate.
The recipe I quickly threw put together was this:
- 1 pkg MimicCreme, Sweetened (if you use the unsweetened version, you will need to add your sweetener of choice - to taste)
- 1/3 cup of unsweetened cocoa, heaping
- 3/4 tsp of vanilla extract or flavoring
That’s it! Easy and simple, right? I froze my ice cream container overnight. The next day, I blended everything together with my stick blender, using the whisk attachment, as you can see here (and yes, I am a messy cook).
Then, I poured it into my trusty pre-frozen ice cream maker.
After a few whirls and pauses (these ice cream makers have you turn the crank then wait a few minutes, and turn again, for up to 30 minutes before the product really resembles anything like ice cream), it started to look like this.
TGH and I did try some of this at the “soft” stage and we both really liked it. It tasted closer to ice cream than the rice substitutes I’ve had. I can’t speak for the soy versions but from what I’ve heard, they can have a chalky taste to them. There was none of that with the MimicCreme. It was smooth, had no aftertaste, and was creamy - not at all icey as I suspected it might be. I went on to let it become a “hard” ice cream and then had my niece try it. She is lactose intolerant but can handle frozen yogurt. She gave it a try and proclaimed that if I hadn’t told her what it was, she would have just assumed it was frozen yogurt. She couldn’t tell the difference. I’d say that’s a pretty good review right there since it passed for a dairy product, which was the intention.

I did find MimicCreme to be a bit pricey, but then, cashews and almonds are pricey and this product allowed me to make a delicious ice cream substitute - one that I could vary with different recipes and ingredients.
After tasting and testing this product, there is no doubt in my mind that it would be equally as amazing and delicious in sauces and soups. I can’t wait to try those things. But my next priority with this will of course be to make a nice batch of Maple Walnut ice creme!

Hey, my phone didn’t ring! Ha! Ha! I missed the icecream par-tay. LOOKS so darn good! I don’t have an icecream maker though
But, is sure looks tasty! Good for you Teeni! If you like it in your alfredo sauce, lemme know and I’ll give it a whirl 
Sorry, Lumpy, the ringer on your phone must have gone silent! LOL. I’ve had my ice cream maker for years now but haven’t used it in so long. I had to dig it out of the basement to try this and I’m so glad I did. If you ever decide to get an ice cream maker then you definitely should check out Donvier’s. I love that you just freeze the inner chamber - no need for rock salt or elecricity (other than what is already used to run your freezer).

Oh, that’s great, Hay! I’ve found a few stinky products that way too but at least I’m only trying one new thing each food shopping trip and I’m glad because we also have found some real winners this way.

I have issues with dairy, but have trained myself to forgo it. I miss cheese the most though. Ice cream? I can live without it.
Unless it involves my favourite frozen dessert, which includes chocolate marble coffeecake, grand marnier, and berries of the woods jam. Then I must have it.
Wow - that sounds like one decadent and complex dessert. I wouldn’t want to have to make it but I’d sure help you eat it! LOL. I have found some cheeses that work for me. I’ll probably do a review post about them soon but can email you the info if you are interested.

It does look good, and you make it sound good. Definitely give us a report on the maple walnut!
You can use the same product to make alfredo or ice cream. Think of it like a container of heavy cream. You can whip it for dessert (woo-hoo) or you can use it to make a sauce or creamy soup. And, oh, I will definitely report back once I make me some maple walnut!

Wow Teens, that looks good! I love almond milk (unsweetened) and get it from the local Trader Joe’s - they have all kinds of amazing stuff. If you have one nearby and have never tried them, check them out.

I love Trader Joe’s! That store and Whole Foods are my faves! I actually have been making nut milk at home. But I do like almond, rice, and hemp milk too! I haven’t seen MimicCreme at those places yet. I’ll have to check the next time I make a trek.

Yes, this product is a substitute for cream so it comes in liquid form and can be made into “ice cream.” It can also be used to make dairy free cream of tomato soup or any cream type of soup. Yum.
