Veggie Meal List

This is just a list I was running around in my head of the different vegetarian meals that TGH and I have had that we like. I was thinking there are a lot here and if anyone wanted to start incorporating more veggie meals into their diets that you could probably do so with out much effort. When I look at this list, I see there are things there that I’d eat without even considering that it was actually a vegetarian dish. Does anyone else have any dishes that could be added to my repertoire?
- pizza
- nachos (you can use black beans instead of meat and all kinds of veggies)
- grilled “cheese” sandwiches (I love mine with tomato and if you use non-dairy cheese then it would also be vegan)
- macaroni and “cheese” with onions, tomatoes, broccoli (again, if you use non-dairy cheese then it would be vegan)
- wheat balls with spinach pasta
- black bean burgers
- sloppy moes
- sheperds pie
- stuffed mushrooms
- veggie chowder
- stupped peppers
- veggie soup
- szechuan dumplings
- baked sweet potato fries
- spaghetti squash
- eggplant parmesan
- veggie lasagne
- wheat berry/barley salad
- ratatouille
- baked potato
- breakfast for dinner - waffles, pancakes, hot or cold cereal, toast with jam (that’s the food, not our cats that I’m talking about when I say toast and jam here)
- chili and corn bread (TGH is master of making an awesome vegetarian chili based on Moosewood’s recipe)
- rice & beans (shredded carrots and zucchini sticks, green onion, hot sauce) - thanks to Beth Ellen for getting me hooked on this one
- peanut butter and jelly sandwiches
- pasta salad
- tortellini salad

mmm, now I’m hungry! I have always been intrigued by Ratatouille ever since we saw the animated film. It looked good.

Ratatouille is also easy to make too. The only thing hard about it is pronouncing and spelling it! LOL.

Gosh, all the things I was going to suggest are already there! Except for sweetcorn fritters - love those!!

A cookbook I suggest is The Vegetable Lover’s Cookbook (amazon sells it for as low as $0.39). It is broken down into vegetable sections (eggplant, potatoes, cucumbers, etc.). It has MANY simple and quick recipes. Not only for vegetarians, its aim is actually for meat-eaters who really like vegetables.

These days it’s so easy to eat meat-less meals. Dairy free is another thing all together. Oh I miss pizza!!!
Could you use soy or other non-dairy cheese to make your own pizza? I’ve been able to use rice slices - I believe they have vegetarian and vegan versions. I don’t know if you can get it where you are though.

I make bean and cheese burritos, and a yummy black bean and corn salsa I use to top a taco salad instead of meat. I only eat beef and steak … can’t ever give them up! But I do enjoy a good veggie meal.
I still eat a little meat myself but I do think we all could stand more veggies too. The black bean and corn salsa does sound perfect to top off a salad! Yum!
Wow, you’re really good. Every time I think about becoming a vegetarian and I try and think of what foods I’d eat I never think of this many. But I do have the Moosewood cookbook, which I love so much it’s all tattered now. I used to live on Buffalo Street (in Ithaca) a little ways up from the Moosewood Restaurant.
I think if you want to eat more veggies, you just need to do it! You don’t have to get fancy and you don’t have to be a strict vegetarian, you just have to move forward!
Anyway, I am just making this list to remind myself that there are lots of veggie meals that are easy and yummy and that I really don’t even think about being vegetarian. I’m not always good, but I do try. Oh, Ithaca is beautiful! I got to eat at Moosewood Restaurant there once - it was delicious!

I love Gardenburgers and Sunburgers and lentil rice loaf. I also love a wrap with lots of vegetables and tahini paste that I make with lemon juice. I add soy cheese and sunflower seeds and 7 different veggies. But I still eat meat. We eat salmon and chicken mostly and a little red meat. I also used to make a tempeh pasta salad which was good. You marinate the tempeh first then saute it then add it to veggies and pasta. That was from The Horn of the Moon Cookbook.The Horn of the Moon is a restaurant in Vermont and I like this cookbook better than Moosewood. It has the best veggie chile recipe also.
I love Sunshine Burgers! I don’t eat the garden ones because of the soy, but I bet they taste good. Lentil rice loaf sounds good too and so do your wraps. If only I were rich and you wanted a job, maybe I’d hire you as my personal cook.

I’ve been doing the crock pot thing since it’s been so hot. Beans are tops! Americans don’t eat nearly enough of them. I add them to nearly anything including most of my favorites which you’ve posted there!
I love beans too! So flexible - great in soups, salads, mushed up and mixed with other stuff, they just can’t be beat.
